Smoked Salmon & Dill Canapé with Whipped Chive Cream Cheese
Makes 16 appetizers
4 slices artisanal whole grain rye bread
4 oz smoked salmon
2 oz whipped chive cream cheese
1 tbsp capers
1/4 red onion, finely sliced for garnish
1 lemon, sliced for garnish
Dill sprigs for garnish
Slice the rye bread in quarters to create small square canapés. To assemble, generously spread each slice of rye bread with chive cream cheese followed by a folded piece of smoked salmon placed on top of each canapé. Garnish with a dill sprig and a few capers. Arrange the hors d'oeuvres on a decorative platter and garnish with finely sliced red onion and fresh lemon. Finish with a little fresh ground black pepper, if desired.
