Grilled Thai Red Curry Chicken with Coconut Milk
Serves 6
1/2 cup low-fat Greek yogurt
1/2 cup coconut milk
3 tbsp Thai red curry paste
1 tbsp grated ginger
1 tbsp finely chopped garlic
1 tsp turmeric
2 tbsp fish sauce
2 tbsp brown sugar
Juice from one lime
4 lb chicken breasts or thighs, bone-in
In a large bowl, combine the Greek yogurt, coconut milk, curry paste, grated ginger, chopped garlic, turmeric, fish sauce, brown sugar and lime juice and mix well. Add the chicken and toss to coat all of the pieces well. Cover and marinate at least 2-3 hours or overnight. Preheat a grill to medium-high. Cook the chicken skin side down until the skin is browned and crisp, about 10 minutes, then turn the chicken skin side up, cover and continue to grill over medium heat, until the meat is cooked through, about another 15-20 minutes. Serve on a platter garnished with fresh mint, chives and homemade peanut sauce.
