Avocado, Blueberry & Pumpkin Seed Salad
Serves 2
1 head Romain lettuce, washed and chopped
2 ripe avocados, peeled and sliced
1/2 cup fresh blueberries
1 tbsp pumpkin seeds
1-2 tbsp olive oil, to taste
Maldon and fresh cracked white pepper, for garnish
Arrange the chopped lettuce on a decorative platter then top with the sliced avocado. Drizzle the olive oil over the salad and season with malden salt and fresh cracked pepper, then garnish with the blueberries and pumpkin seeds.
