Gluten-Free Peanut Butter Cookies
I am forever thankful that I have no food allergies nor faced with any compulsory dietary restrictions, for I know many who do and struggle with with challenges of making appropriate food choices on a day to day basis. With Christmas just around the corner, it's nice to have a sweet offering to wrap up and send off to my gluten-sensitive friends.
Gluten-Free Peanut Butter Cookies
Makes 24
1 cup creamy peanut butter
1 cup granulated sugar
1 large egg, beaten
1 tsp baking powder
1 tsp vanilla extract
Preheat oven to 350°F. Line a baking sheet with parchment paper. In a large mixing bowl or standing mixer, combine all of the ingredients and mix well. Roll the dough into one tablespoon balls, flatten slightly with the palm of your hands and place on the baking sheet about 3-inches apart. Bake for 10 minutes, then remove from the oven and let cook on the baking sheet for 2-3 minutes. Gently transfer the cookies to a wire rack and let cool completely before storing in an airtight tin.
